Ingredients
500gPlain flour
2tbspSelf-raising flour
125gSoft butter
100gSugar
250mlMilk or non-dairy
4Eggs - Yellows
14gInstant Yeast - 3/4 fresh yeast
Lemon Zest
ExtrasChocolate chips, almond pieces, raisins
Instructions
Yeast starter
Warm up the milk and add instant yeast and sugar. Make sure the milk is not too hot. It should be a lukewarm temperature.
Let it rise in a warmer place for 20 minutes or until you will see bubbles and it's double size.
Dough
In the large bowl mix all dry ingredients and combine well.
In the smaller bowl whisk soft butter with eggs yolks and pour the liquid into the dry ingredients and combine for another minute. If you use a stand mixer you don't have to mix the eggs separately. Let's combine for 7 minutes or until the dough is flexible and soft.
Once the dough is mixed well, you can also knead with your hands to make sure the structure of the dough is done properly. Add raisins or chocolate chips and combine.
Brush a large bowl with vegetable oil and place the dough into the bowl and cover it with plastic wrap or towel. Let it rise for another hour or until the dough gets double size.
Once the dough rises make the same size loaves or plaited the bread. You can play with the shape of the bread.
Let it rise for another 40 minutes.
Slightly brush over with the egg and put it into the oven for 40 minutes or until the bread is golden and properly baked inside.
