Sweet potato salad with tofu

Delicious and easy sweet potato salad with tofu will be great option for lunch. Vegan-friendly and so healthy.

Ingredients

  • 2 large sweet potatoe
  • 200 g tofu
  • 1 tbsp olive oil
  • 60 g baby spinach leaves
  • 200 g pre-cooked lentils
  • 1 medium avocado
  • 1 tbsp lemon juice
  • Salt
  • black pepper

Instructions

  • Preheat the oven to 200C°
  • Peel and cut the tofu and sweet potatoes into the cubes and place them on the baking tray. Add olive oil. Bake for 15 minutes.
  • In the large bowl mix roasted potatoes and tofu with spinach, lentils, lemon juice. Add salt and black pepper. Serve with avocado.
