This is one of my favorite recipes. It’s tasty and full of good and helpful nutritions for your body.
This salad is great not only for great nutrition but also it’s perfect for almost all kinds of diets.
All the preparation and cooking take 30 minutes and because of the lentils, it will keep you full for a longer time.
I made this salad as part of my clean eating and I have to admit it’s just delicious and really keeping me full all afternoon. Also a great recipe for meal prep!
Are lentils good for you?
Of course! The lentils are super-rich and healthy for your body and stomach. If you are keeping a diet it will surprise you that the lentils are low in calories but super-rich in protein. Lentils can protect your heart and lower the risk of heart disease and keeping your blood sugar stable.

Sweet potato salad with tofu
Ingredients
- 2 large sweet potatoe
- 200 g tofu
- 1 tbsp olive oil
- 60 g baby spinach leaves
- 200 g pre-cooked lentils
- 1 medium avocado
- 1 tbsp lemon juice
- Salt
- black pepper
Instructions
- Preheat the oven to 200C°
- Peel and cut the tofu and sweet potatoes into the cubes and place them on the baking tray. Add olive oil. Bake for 15 minutes.
- In the large bowl mix roasted potatoes and tofu with spinach, lentils, lemon juice. Add salt and black pepper. Serve with avocado.
