Fluffy low-carb Pancakes/KETO/ PALEO


Nothing is better than the lazy morning with warm and fluffy pancakes.

Well, maybe you are not a morning person to be ready to prepare pancakes for yourself, but I am sure this recipe will be the right thing to make as it’s super easy and tasty.

My morning

I have to admit that the pancakes are my favorite breakfast at all. Although I am not a big fan of warm&sweet meals, the pancakes are the right key to my heart. I tried so many variants of pancakes, but I am a classic girl …  I know some people just love bacon pancakes or maple syrup on the top, but my favorite pancakes are with basic blueberry purré. It’s easy, sweet and fruity. Another healthier option is Protein pancakes . I think it’s amazing to slow down a bit and enjoy a little thing as it’s breakfast. I can’t imagine a better start of my weekend than with a delicious breakfast. 


 People love them and I am sure it’s the great fruit for our health. I have to admit that I’ve never been really keen on this fruit as a child, maybe it was because I had a super sweet tooth and I found it just not too sweet for me. Definitely I was a bigger fan of watermelon and strawberries. ? I was wondering what kind of benefits are included in the blueberries and how can I make consuming easier for myself, as I eat the blueberries uncommonly. 

Coconut flour

For this recipe, I used coconut flour. It’s a gluten-free option with full benefits for your health. It’s rich in nutrients and good fats. Coconut flour may help with heart problems an unstable blood sugar. Also, you can find this flour as the main part of the diets. Although the coconut is rich in fiber, nutritions, and good fats, it’s really low in sugar.

How to make perfect pancakes

I am sure you know all the delicious photos of fluffy pancakes, but also you know that it’s not easy to make perfect shape and texture of them. I have a little trick for you! Everything is depending on eggs and recipe, but If you will separate yolk and white you can easily make fluffy pancakes. Whip eggs whites and add them (gently) into the pancakes dough. The next trick is really fast flip during the cooking. 

KETO or PALEO Pancakes?

Everything is possible. Maybe you are surprised that sweet meals can be Keto/Paleo or suitable for diets. The coconut flour has only 2 net carbs per one tablespoon so it’s pretty good for your digestive and weight loss. Also, because the recipe is sugar-free and only contains sugar-free syrup or water, you can fully enjoy it. 

Sugar-Free Syrup

Well,  I used the water but if you wish to make the pancakes a little bit sweeter or you love to pour the maple syrup on the top, I have perfect syrup for you. It’s sugar-free and suitable for all diets. You can find it on Skinnyfood website. (Try their lucky wheel to get some sugar-free products for free!!!!)

Fluffy low-carb Pancakes

Try one of my favorites recipes! Easy and low-carb breakfast for every day.
Servings 6 Pancakes
Prep Time 10 mins
Cook Time 15 mins
Total Time 25 mins


  • 1 tsp Vanilla extract
  • 1 tsp Baking powder
  • 1/4 cup Coconut flour
  • 3 Eggs
  • 2 tbsp olive oil
  • 2 tbsp Water/ KETO syrup For no diet version use any milk


  • In the large bowl mix coconut flour, water (syrup), eggs, vanilla extract, baking powder, oil, and whist it properly. Make sure that the dough is without any clumps.
  • Heat the pan on medium heat and when the skillet is hot pour enough of pancakes dough on the pan. The best time is 4-5 minutes from both sites. Don't change the temperature as the pancakes won't be fluffy. Keep cooking slower.
  • Serve the pancakes warm. Fell free to use the fruits or sugar-free syrups.

Blueberry puréé

  • In the pan mix Blueberries and 1 cup of xylito and cook it for 3 minutes until the pyreé is smooth.
  • Pour the warm blueberries on pancakes.
