How to make it Vegan
If you are not on a Vegan diet you can feel free to use the eggs. I would use 1 egg on 15-20 cookies. It depends on the size of the cookies. If you are vegan or cutting dairies, you should make flax eggs. A super easy thing when you stir 1 tablespoon of ground flax seeds and 4 tablespoons of water. Let it rest for a few minutes until it will make a gel. Even when I am not vegan I prefer flax eggs and I use it always during my baking.
How to storage cookies
I used a container and was keeping them for one week. I am sure you can use any box or container and leave the cookies in the fridge or freezer if you wish to store them for a longer time.
More ideas
You can be really creative with this recipe. Use chocolate chips or different types of sugar, cinnamon, ginger or sprinkles. I love the classic recipe, but I am sure it would be delicious with chocolate chips. Add a little bit of salt, especially if your peanut butter is unsalted.
Tip: Buy only organic, sugar and palm oil-free peanut butter. The taste is much better and it’s healthier. Don’t need to mention that you will cut some extra calories!
Easy peanut butter cookies/ VEGAN, PROTEIN
Ingredients
- 250 g Peanut butter
- 130 g Coconut sugar
- 1 Egg or flax egg
- 1/2 tsp Baking soda
Instructions
- Preheat oven on 170 C° and line a baking tray with parchment paper.
How to make flax egg
- To skip eggs we can make flax egg mixture. Stir 1 tablespoon of ground flax seeds and 4 tablespoons of water. Let it rest for 5 minutes or until a mixture has consistency of gel.
- In the large bowl mix all ingredients together and bake cookies for 20 minutes.
